Turkey Skillet
INGREDIENTS
1-2 sweet potatoes, chopped
1 pack of ground turkey (or chicken)
1/2 cup black beans (or kidney)
1/2 cup red salsa
1/2 red onion, sliced
1 tbsp minced garlic
1 tsp cumin
1 tsp paprika
1 tsp chili powder
Salt + pepper, for taste
Avocado, for topping
Cilantro, for topping
Shredded parmesan cheese, for topping
METHOD
Spray a cast iron skillet or a large, deep pan with avocado oil and keep it on medium heat.
Add in the garlic, onions, cumin, paprika, chili powder, salt, pepper, ground turkey meat and brown the meat until fully cooked.
Add the chopped sweet potatoes and cover the plan for 12 minutes, or until potatoes are soft (to your liking).
Add in the black beans and salsa. Mix until combined.
Sprinkle cheese on top and serve up with your choice of toppings! I like to add avocado and cilantro.
