Protein Muffins
INGREDIENTS
1 1/2 cup oat flour
1/2 cup protein powder
1 tsp baking soda
3/4 tsp baking powder
3/4 tsp salt
1/2 tsp cinnamon
2 cups mashed overripe banana (about 3 bananas)
1/2 cup honey
1/3 cup water
2 tsp vanilla extract
sprinkle in chocolate chips + slivered almonds (optional)
METHOD
1. Preheat the oven to 350°. Prepare a muffin pan.
2. Mash the bananas first then add in the remaining ingredients together, while mixing thoroughly in a large bowl.
3. Scoop 2 tablespoons of the mixture into each muffin spot. Sprinkle a few chocolate chips on the top (if you’d like!).
4. Bake for approximately 20 minutes.
5. Let it cool for 10 minutes. Serve up and enjoy! I like to add with a little peanut butter or butter & a cup of milk. SO GOOD!
